New Chef at The Dunes Cafe and Bar

Pacific Dunes is excited to welcome our brand new head chef, Sheldon Black, to the Dunes Cafe and Bar. Sheldon is one of the leading chefs in the region, having worked at the million-dollar beachside Merewether Surf House, Shoal Bay Resort and Spa’s distinguished Country Club and the Newcastle Cruising Yacht Club on the harbour.

Sheldon has created a brand new dinner menu with an emphasis on fresh, locally-sourced ingredients and lots of rich flavours. Take a look here!

“Food to me is a celebration of flavour and freshness from the use of the freshest produce that I have the opportunity to source,” explained Sheldon.

“My menus will be designed by the seasonality of the freshest local produce. This allows me to use the abundance of produce that is at its best and freshest to create dishes for my diners to enjoy. My dishes are the direct expression of the joy and love I have for food and my aim is always to reflect this passion in a dish so my guests can feel the same way I do.”

Sheldon is looking forward to his first event at Pacific Dunes this month – Valentine’s Day. With live entertainment, Sheldon’s five-course menu and a sold out status, it looks to be an exciting night.
